About Perugu Vada

Perugu vada is the Telugu name for dahi vada: medu vadas soaked in thick whisked curd and finished with a tempering of mustard seeds and curry leaves, with ginger and a little green chilli. Cool, tangy and soft — the opposite of a vada straight from the fryer.
